This truly is a unique spirit, one of the few Grappa di Barolo made with the Solera method, which is often used for the production of Caribbean rum or fortified wines such as Madeira. The Solera method consists in a “dynamic” refining process in which, year after year, parts of young grappa are added to parts of older grappa in order to create a unique blend. Despite being aged for a long time, it preserves the freshness and character of the original grape (>> find out more about the Solera method). Grappa di Barolo Solera  comes exclusively from grappas that were made with fresh pomace of Nebbiolo grapes harvested within the Barolo denomination’s limited area and destined to make Barolo wine. The oldest part of Solera aged for at least 7 years in second passage barriques used for Piemonte Chardonnay.
